In this video we examine in biological detail how to properly prepare a nuisance wild raccoon which was provided to me by a farmer, in a way that makes it palatable. Here, we show and discuss, in graphic detail, how to skin, de-gland (remove scent glands that create an off-flavor) and then marinate overnight. Next we turn the wild nuisance raccoon into a stew for a delectable traditional meal.

Big thanks to my childhood stuffed animal “rocket” for all it’s cooperation in filming the more “age restricted” portions of the filming. It was a great stand-in given the circumstances.

KNIFE USED – — To skin the racoon, I am using a Trout & Bird by Grohmann: http://www.gknives.com/index.php/products/outdoor/hunting-knives

Watch us skin, de-gland, de-bone and cook over open fire.

Soaking was done overnight in vinegar and pickling spices.

The raccoon was then boiled for about 1.5 hours, then transferred into a pot with the remaining ingredients with about 1 cup of reserve from the brine solution.
