We spend a day off grid at the cabin making delicious maple candy from the trees that surround us on our 40 acres in the Canadian wilderness. Maple candy is made from maple syrup, but boiled or cooked down a little more to reduce the water from the sap. Normally syrup has a small amount of water, but candy removes almost all of the rest.
