Lamb Steak and Creamed Nettles. Bow-drill Friction Fire. Canoeing With My Dog.

In this video, Maggie and I head off in my cedar strip canoe to cook up a bit of lunch by the river. After making fire with my old nemesis, the bow-drill, I cook up some creamed nettles to accompany our lamb leg steaks – cooked to perfection (still bleating baaaahhh!).

Creamed Nettle Recipe

Knob of butter
1 small onion
2 tbsp plain flour
200ml milk (full fat)
100ml single cream
400g young nettle leaves
Ground nutmeg

Chop the nettles and bring to the boil in a pan of water.
Take off the heat and allow to steep while you prepare the sauce.
Gentle cook the onion in the butter until soft and translucent.
Stir in the flour and cook gently for 2 minutes.
Add the milk and stir until thickened (take care not to allow the milk to burn).
Squeeze the excess water out of the nettles and add to the sauce.
Pour in 100ml single cream and heat gently.
Dust with grated/ground nutmeg.
Enjoy!
