The sharpening stone used in this video is the edge pro 220 grit stone. The strop used is the knives plus strop block. This is just to prove a point. Im not saying this is the best sharpening job in the world, not even close. But, if the proper grit is used is shouldn’t take all day to sharpen any knife. Regardless of steel type. Coarse grits remove metal. Sharpening removes metal. Why make it harder on yourself. Start coarse!😉
